Position Purpose
Under the direction of the Sr. Area Manager, the Dining Retail Manager is responsible for providing support and oversight for the daily operations of multiple retail dining locations including Ramekin Cafe, The Fern Cafe, Novack Cafe, in addition to Dining's operated food pantry and other sites as needed. This role ensures efficient and high-quality service, prioritizing customer satisfaction, and maintaining strict adherence to safety and sanitation standards. This position supervises lead Food Service Associates and student employees, fostering a positive and productive team environment. Additionally, the position manages the ordering and inventory processes to support seamless operations and consistent product availability across all assigned locations.

Required Qualifications - Education and Yrs Exp High School plus 5+ years' experience or equivalent combination of education and experience
Required Qualifications - Skills, Knowledge and Abilities

  • Five years of general food service experience including supervisory/management experience.
  • Demonstrated ability to work in a fast-paced food operation and to make decisions under pressure.
  • Excellent interpersonal and communication skills to deal effectively with customers and supervise employees.
  • Strong organizational skills and ability to shift attention to changing details and maintain accuracy and timing of food preparation and work scheduling.
  • A solid working knowledge of schedules/scheduling software is preferred.
  • Knowledge of sanitation regulations and policies and the ability to obtain a sanitation certification. Knowledge of computer operations and familiarity with remote data terminals.
  • Must promote a positive work environment and be committed to achieving excellence in a team setting.
  • Must be able to qualify as a Dartmouth Approved Driver.
  • Ability to work nights and weekends as needed or directed.
  • Strong commitment to a diverse working environment and to serving the needs of a large and diverse community.

Preferred Qualifications
  • Minimum five years of supervisory/management experience preferred.

Key Accountabilities


Description
Shift Operations


  • Oversees and participates in the day-to-day shift operations.
  • Assigns work and workforce as required to balance staffing changes and customer service needs to ensure positive guest flow and proper food preparation.
  • Trains all unit staff to include student workforce on operating practices, standards and required documentation.
  • Enforces health and sanitation policies and procedures with concern to FDA Food Code requirements, ensuring cleanliness, proper handling and preparation of all food items, and compliance with operating practices to meet We Proudly Serve Starbucks requirements, in additional to Dining's internal retail standards, so that quality and expectations are maintained.
  • Supports We Proudly Serve Starbucks national Limited Time Offers (LTOs) as offered to the college and creates own internal promotions to stimulate sales and increase average check.
  • Develops and implements training programs in each unit with a focus on keeping the operations efficient, clean, and desirable to the campus community. Works with the Sr. Area Manager on subject matter development.
  • Responds to customer comments/complaints about quantity/quality of food, customer service, etc.; seeks to satisfy customer needs.
  • Supports and implements marketing plans in each unit; works with the Sr. Area Manager in developing these plans.
  • Works with fellow managers and Dining leadership to communicate information, operational challenges, equipment needs and makes changes to cafe/facility operating procedures as needed.
  • Notifies Security or Dining leadership when assistance is needed.
  • Assists with seasonal catering as needed.
  • Ensures observance of liquor license laws, when appropriate.
  • Works at other areas within Dartmouth Dining Services as required.

Human Resources


  • Monitors and evaluates work performance to ensure compliance with standards, productivity, quality, time and attendance and customer service expectations.
  • Identifies performance problems, conducts/recommends training or initiates appropriate corrective action. Implements disciplinary measures, when necessary, e.g. verbal warnings or corrective instructions, and submits follow-up documentation to Labor Relations and Campus Services HR.
  • Communicates policies and instructions to employees. Monitors their arrival and departure times to ensure that reported hours match those that were worked.
  • Ensures compliance to SEIU and SWCD union bargaining agreements for workforce and College; addresses potential issues quickly and effectively.
  • Attends trainings offered by the College, Starbucks and/or professional organizations to stay current with food service and supervisory policies and practices. Disseminates information to work teams.
  • Attends ServSafe training and maintains certification as required.

Description
Menu Coordination


  • Under the direction of the Sr Area Manager, utilizes, supports, and maintains menu management software and associated database for locations to for all offerings.
  • Confirms accuracy of menu items offered and the associated nutritional information, ingredients and properly calculates product inventory on hand for each venue.
  • Maintains and analyzes daily inventory counts, forecasts of usage, and places orders for Dining's Central Production facility and outside specified vendors for the venues.
  • Ensures that deliveries and necessary supplies are stocked for the shift and that all stock is rotated.
  • Generates reports on sales, product movement, product waste, for future use within system.
  • Monitors sales and recommends appropriate changes, based on high costs or lack of item popularity. Makes recommendations regarding menu offerings and development; may compute cost and price analysis.
