Position Overview

The Manager, Culinary, will lead all food service functions for a designated campus. This position will be responsible for all operational, sales, and analytical functions of each sub-department. The Manager, Culinary will functionally oversee, mentor, and develop all food service team members at designated campus and additional program oversite as needed by the culinary department.

Shift: 7:00A-3:30P

Essential Duties

Include, but are not limited to, the following:

  • Analyze historical sales data to understand customer preferences. Use analytical data to design competitive menus and product mixes.
  • Identify & implement production efficiencies to maximize labor output.
  • Conduct market analysis to maintain or grow customer participation based on competitive pricing, market dynamics, customer segments, and buying patterns.
  • Review updates and additions to recipe file.
  • Lead local purchasing focus in accordance with Connection Kitchen's food philosophy. This includes building farm/vendor relationships, identifying menu outlets, and increasing employee development around scratch cooking.
  • Implement increased HeartWise offerings through informed menu placements, new recipe construction, and following market trends.
  • Assume the role of Executive Chef in their absence.
  • Effectively manage, support, and guide your team including, but not limited to, delegating tasks and responsibilities, assessing employee performance and providing helpful feedback and training opportunities.
  • Consistent demonstration of exceptional leadership qualities including, but not limited to, the ability to attract and retain the best team, foster a culture of high performance, lead with integrity, humility, accountability, and courage, and set a clear vision to energize teams towards the future.
  • Obtain feedback on food and service quality and handle customer problems and complaints.
  • Review ordering for all food and supplies based on production and business needs in accordance with Exact Sciences standards.
  • Establish inventory control and communicate to Sous Chef best use of inventory and leftovers to achieve budgeted food cost.
  • Keep current with food safety requirements, consumer protection, public health regulations, and industry best practices to ensure continued compliance with regulatory changes.
  • Monitor, adhere to, and implement sanitation/safety standards within Food Services and ensure all personnel follow safety/sanitation standards.
  • Understand cooking methods and procedures, and knife handling skills.
  • Ability to read and follow cooking directions.
  • Ability to creatively develop and inspire new culinary recipes and trends.
  • Strong commitment to service and hospitality excellence.
  • Keep team promptly and fully informed of all problems or unusual matters. Take prompt corrective action when necessary or suggest alternative course of action.

  • Ability to work seated for approximately 30% of a typical working day. Ability to work standing for approximately 70% of a typical working day.
  • Ability to lift up to 50 pounds for approximately 5% of a typical working day.
  • Ability to grasp with both hands; pinch with thumb and forefinger; turn with hand/arm; reach above shoulder height.
  • Ability to comply with any applicable personal protective equipment requirements.
  • Ability to travel 5% of working time away from work location. May include overnight/weekend travel.
  • Ability to drive a vehicle between Exact Sciences locations as business needs require.

Minimum Qualifications

  • Culinary Arts Degree; or Bachelor's degree in food service, hospitality management, or related field; or high school degree/general education diploma and 4 years of relevant experience in lieu of Bachelor's degree.
  • 4+ years of experience working in food service management, hospitality management, or related field.
  • 2+ years of leadership experience leading a diverse team of food service professionals.
  • Basic computer skills include Internet navigation, Email usage, and word processing.
  • Proficient in Microsoft Office programs such as Word, Excel, and Outlook.
  • Possession of or ability to obtain Serve Safe Manager certification within 3 months of hire and maintain throughout employment in position.
  • Possession of a valid driver's license; nosuspended, revoked, surrendered, invalid, etc. allowed.
  • No more than two moving violations, events, or accidents within the last 36 months.
  • No alcohol or drug event in which a vehicle was driven by the candidate or employee, including but not limited to Blood Alcohol Content (BAC) failure, refusal to submit to alcohol or drug test, alcohol related suspension, etc. in the last 36 months.
  • No other results from the Motor Vehicle Report (MVR) check that exposes Exact Sciences to what Exact Sciences deems to be an unacceptable level of liability.
  • Demonstrated ability to perform the essential duties of the position with or without accommodation.
  • Authorization to work in the United States without sponsorship.

Preferred Qualifications

  • Experience working with multiple operations; including, but not limited to, micro markets, coffee bar, catering, grab-n go, online ordering.
  • Experience with building relationships with local farmers and purveyors.

Salary Range:

$84,000.00 - $150,000.00

The annual base salary shown is for this position located in US - WI - Madison on a full-time basis. In addition, this position is bonus eligible.
