Job Description

The Pastry Cook supports the Pastry Chef in both technical execution and day-to-day operations, contributing to the smooth and efficient functioning of the pastry kitchen and related food production areas. This role ensures high standards of quality, creativity, and consistency in all baked goods and desserts, while maintaining a clean, organized, and professional environment in alignment with hotel standards and guest expectations.



Responsibilities

    Collaborate with the Pastry Chef to manage staff scheduling and ensure adequate coverage.
  • Ensure team members take required meal breaks and monitor/control overtime.
  • Actively contribute to the development and innovation of pastry menus.
  • Meet all deadlines for projects, events, and special requests.
  • Assist in training and development of pastry staff to uphold quality and consistency.
  • Oversee preparation of all baked goods, including breads, rolls, danishes, and related items.
  • Support the production and plating of banquet pastries.
  • Ensure proper storage methods are followed for advance production and ingredient preservation.
  • Fulfill pastry cart orders as needed to support service demands.
  • Maintain consistent product availability for all functions and outlets.
  • Enforce proper sanitation and hygiene practices across all kitchen areas and equipment.
  • Maintain a clean, organized, and efficient kitchen environment during daily operations.
  • Ensure compliance with Ecosure standards and food safety procedures.
  • Verify that all kitchen equipment is in proper working condition; report and address issues promptly.
  • Supervise and maintain cleanliness and proper food rotation in all walk-in refrigerators and storage areas.
  • Oversee and participate in daily food production to meet quality and timeline standards.
  • Monitor staff safety practices and enforce health and safety guidelines.
  • Foster effective communication and collaboration with Front of House, Catering, and Stewarding teams.
  • Lead pre-shift briefings with kitchen staff to communicate daily operations and special events.
  • Clearly understand departmental goals and communicate expectations to team members, ensuring proper execution.
  • Monitor prep work, inventory levels, and maintain accurate par stock.
  • Conduct walk-throughs of function areas to ensure quality, presentation, and consistency of products.


Qualifications

  • Demonstrate clear thinking and sound judgment to remain calm and effectively resolve issues in a fast-paced environment.

  • Maintain a clean and organized work area at all times in compliance with hygiene and safety standards.

  • Possess basic math skills to accurately interpret and execute recipes, measurements, and portioning.

  • Flexibility to work various shifts, including weekends and holidays, based on business needs.

  • Uphold a professional appearance, attitude, and performance that reflects the hotel's standards.

  • Physically capable of moving, lifting, carrying, pushing, and pulling items weighing up to 70 pounds without assistance.

  • Able to stand, walk, and perform repetitive motions for extended periods or an entire shift.
