THE JOB: The Director Assistant Executive Chef supports the property Lead Chef in directing and leading the Culinary team in alignment with the MGM brand. This role oversees assigned segments of culinary operations, helping to achieve financial and operational goals, while ensuring team performance, scheduling, training, and facility standards meet company expectations. The position upholds MGM Resorts' service standards and delivers exceptional dining experiences, in full compliance with company policies and procedures.
THE DAY-TO-DAY:
Oversee culinary leadership in assigned areas, ensuring alignment with financial goals, food quality standards, culinary execution, cleanliness, safety, and MGM brand expectations. Implement and monitor culinary policies, procedures, training programs, menus, schedules, and operational directives. Interview, hire, train, and coach room chefs to ensure effective outlet performance and team development. Foster a culture of engagement through regular feedback, ongoing training, and employee development initiatives. Continuously assess guest satisfaction and provide feedback or menu recommendations in response to evolving preferences or market trends. Leverage support from Centers of Excellence (COEs) to manage food costs, labor, and operational expenses to maximize profitability.
THE IDEAL CANDIDATE:
Bachelor's Degree or equivalent experience required. Associate's degree in culinary arts or completion of a certified culinary training program from a recognized national culinary association preferred. Minimum of 4 years of relevant culinary leadership experience, including experience at a multi-outlet property with high-volume, luxury banquet operations. Deep knowledge of culinary concept development, food production, presentation, service, and cost controls. Proven ability to implement and maintain efficient operational processes that ensure food quality and consistency across multiple outlets. Strong leadership and communication skills with a focus on team development and guest satisfaction. Must be able to work flexible hours, including nights, weekends, and holidays.
