Join Our Team as a Production Manager

Compensation:

What You'll Do:

FOCUS ON FOOD QUALITY & CONSISTENCY



  • Ensure all food produced in the central kitchen meets company standards for taste, consistency & product quality for all supported restaurant locations.
  • Oversee adherence to standardized recipes and portion control to maintain brand integrity and cost control.
  • Implement quality control measures, including regular taste tests and recipe audits.



MANAGE HIGH-VOLUME FOOD PRODUCTION



  • Lead the execution of bulk food preparation, including batching, portioning, packaging, and distribution to multiple locations.
  • Partner with the Commissary Manager to develop, refine, and execute production schedules that balance efficiency and demand.
  • Ensure proper utilization of cooking and production techniques suited for large-scale operations (e.g., sous vide, blast chilling, vacuum sealing, etc.).



LEAD & DEVELOP THE CENTRAL KITCHEN TEAM



  • Train, and mentor kitchen staff to uphold production standards and safety protocols.
  • Foster a culture of teamwork, accountability, and continuous improvement.
  • Conduct production & product evaluations and provide ongoing coaching to enhance skills and efficiency.



ENSURE FOOD SAFETY & COMPLIANCE



  • Maintain compliance with health codes, HACCP guidelines, and company food safety policies.
  • Oversee proper food handling, storage, and transportation protocols to prevent cross-contamination and spoilage.
  • Conduct routine safety audits and address any deficiencies immediately.



COLLABORATION WITH RESTAURANT TEAMS & CORPORATE LEADERSHIP



  • Lead production meetings. Serve as a key liaison between the central kitchen and restaurant operations to ensure smooth execution and continuous feedback loops.
  • Provide insights on operational challenges, menu feasibility, and process improvements.
  • Participate in menu development discussions to ensure production feasibility and cost-effectiveness.



CONTINUOUS IMPROVEMENT & INNOVATION



  • Identify opportunities to streamline processes, improve food quality, and enhance efficiency.
  • Stay informed on industry trends, new equipment, and techniques that can enhance production operations.
  • Implement new production methods and technologies that align with business growth and sustainability goals.



What We're Looking For:



  • Educational Background: Minimum of 2 years post-high school education; a bachelor's degree is preferred.
  • Experience: 3+years of experience in high-volume production kitchens, central commissaries, or large-scale catering operations. Prior multi-unit restaurant support or bulk food production experience preferred. Experience managing batch cooking, bulk packaging, and food distribution logistics.
  • Technical Skills: Strong background in food safety compliance, HACCP protocols, and large-scale recipe standardization.
  • Interpersonal Skills: Ability to interact at all levels, including with executives, union representatives, and diverse hourly team members.
  • Analytical Skills: Capable of conducting gap analysis to improve business operations and satisfaction levels.
